  • 6 Ears of Molnar Farms Corn
  • 1 cup Mayonnaise
  • 1 pinch Kosher Salt
  • 1 pinch Fresh Ground Black Pepper
  • 1 cup Cojita Cheese Crumbles
  • ½ cup Ancho Chili Aioli
  • ¼ cup Chopped Cilantro
  • 2 tbsp Chili Lime Dust
  • ¼ cup Toasted Pepitas

Method

Roasted Beet Preparation

Peel and remove silk from corn.

Boil ears of corn in salted water or over a fire grill.

Brush with mayonnaise

Sprinkle with Cotija cheese.

Sprinkle ears with chili lime dust.

Drizzle corn with ancho chili aioli.

Garnish with chopped cilantro and pepitas.
