Kentucky Bourbon BBQ Sauce (Yields 1 Gallon)
- 64 Oz Water
- 16 Oz Tomato Paste
- 2-1/2 Pounds Brown Sugar
- 8 Oz Golden Molasses
- 8 Oz Apple Cider Vinegar
- 3 Oz Kosher Salt
- 6.5 Oz Corn Starch
- 2 Oz Liquid Smoke
- 1 Oz Worcestershire Sauce
- 1 Tbsp Granulated Onion
- 1 Tbsp Granulated Garlic
- 1 Tbsp Cayenne Pepper
- 2 Tbsp Fresh Ground Black Pepper
Carolina Mustard BBQ Sauce (Yields 1 Gallon)
- 2 Oranges, Juice + Zest
- ¼ Cup Extra Virgin Olive Oil
- 1 Dash Kosher Salt
- 1 Dash Fresh Ground Black Pepper
Kentucky Bourbon BBQ Sauce
Mix corn starch with cold water, whisk to make slurry.
In a stock pot combine the tomato paste and water. Mix until smooth, bring to a simmer.
Add the corn starch slurry and whisk together.
Add the vinegar and molasses and whisk to combine.
Add the remaining ingredients, mix well.
Simmer for 30 minutes, remove from stove, and cool.
Carolina Mustard BBQ Sauce
Combine all ingredients in a deep pan over medium-high heat, and whisk till smooth.
Bring to a boil and reduce to a simmer.
Simmer until thickened and has nice sheen, about 20 minutes.
Remove from the heat.
